There are many different techniques that can help prevent chicken from drying out as it bakes. Some suggestions are to soak the chicken in a marinade first, avoid overcrowding the pan, use parchment paper, and either cook small chicken pieces for a shorter cook time at a high temperature, or cook bigger chicken pieces at a lower temperature just until it reaches 165°F.
I provide specific baking instructions and temperatures for each recipe, but in general, most sheet pan recipes suggest to bake chicken between 350°F and 450°F.
Unless a recipe specifically states otherwise, there is no need to cover chicken as it bakes.
How to Store And Reheat
Depending on the ingredients used, each recipe will have a different timespan for storage. So, be sure to take a look at the recipe card for specific instructions. However, in general, once cooled, sheet pan chicken recipes can be transferred to an airtight container and stored in the refrigerator for up to 4 days.
To reheat, I typically spread out the ingredients on a sheet pan again and pop them back in the oven (which I preheat to 350ºF) until the ingredients are warmed through again, which typically takes 5 to 8 minutes.

I was hoping you could help me with an issue I have whenever I make a sheet pan dinner. There is so much liquid that everything just sort of steams and doesn’t get brown. I made the harvest chicken with maple dijon dressing. Everything was cooked but the vegetables were kind of mushy & watery. I used a full size sheet pan so there was room in between the vegetables and chicken, I heated the pan in the oven & sprayed it with cooking spray before putting the vegetables on it. I absolutely love roasted vegetables and sheet pan recipes but haven’t really had much success with them. Thanks.
Hi Virginia, you are trying all of the right things – a larger sheet pan, spacing out the ingredients, heating the sheet pan prior. The one other thing I would suggest is seeking out natural chicken that doesn’t have a saline solution added to it (as a plumper). Some chicken contains this additives and leeches a lot of liquid when cooking.
