This easy citrus vinaigrette recipe combines fresh orange and lemon juices with thyme, garlic, Dijon mustard, and maple syrup for a bright, flavorful homemade dressing. Ready in just 5 minutes, it’s delicious on salads and also works well as a light marinade for chicken, salmon, or cod.

Ingredients

  • ½ cup avocado oil or olive oil
  • Zest and juice of 1 medium orange (~ ½ teaspoon zest + ¼ cup juice)
  • Juice of 1 medium lemon (~ 3 tablespoons)
  • 1-2 garlic cloves, grated or finely minced (~ 1 ½ teaspoons
  • 2 teaspoons pure maple syrup
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon fine salt
  • Pinch of black pepper

Instructions

  1. In a small bowl or jar with a tight-fitting lid, add the oil, orange zest and orange juice, lemon juice, garlic, maple syrup, thyme, mustard, salt, and pepper. Whisk or shake to combine the ingredients. 
  2. Store the vinaigrette in a jar with a lid in the refrigerator for up to 2 weeks.

Notes

The vinaigrette may solidify once chilled. This is normal. Simply let it sit at room temperature for a few minutes or run warm water over the jar before using, then re-shake or re-whisk it.
